Apple Slaw

Yesterday, I promised an apple slaw recipe was coming your way this week! And here it is, and damn it’s so simple!

I get more excitement from folks when I post these simple recipes, that to me seem almost to easy to post. But I’m happy to make you happy with them! And this apple slaw is definitely going to do that, I think. 

In 2018, I had promised more simple recipes and budget friendly recipes per requests. And this apple slaw checks both of those boxes. I will still being doing recipes that require more ingredients/work or complication.  But I totally get the desire to have recipes that don’t require over thinking and take one trip to the pantry. Not 2 trips to the grocery store.

For this recipe, I used a spiralizer for the apples. But if you don’t have that, you can just thinly slice them into match sticks.  I also kept the flavors really simple as to go with whatever you’re serving it along side very easily. I like to serve it with pulled pork, but it’d be great next to ribs or burgers as well.

In the past I haven’t used the purple cabbage, but I had some leftover and it adds a nice pop of color. If you don’t use the purple cabbage just use the whole head of the green cabbage.

Apple Slaw

  • 1/2 head green cabbage thinly sliced
  • 1/2 head small purple cabbage thinly sliced
  • 2 apples thinly sliced or sprialized
  • 2 1/2 - 3 tbsp apple cider vinegar highly encourage you to use a good quality one
  • 1/2 cup mayo
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper or more to taste
  1. Mix the vinegar, mayo, sea salt, and pepper in a small bowl. Taste to adjust the flavors to your liking.

  2. Add the cabbages and apples in a large bowl, then pour the dressing over top. Toss to completely coat. 

  3. Allow to chill at least two hours before serving.
