Hope you all had a great weekend! We had an pretty easy going weekend. Did a few things, saw some good people, and even hit the fair. Much need after our week. Sure feels good when you can recharge a bit, and be home. Nothing is better than home.
I have a great, easy weekday meal to make your work week go by better! And its tasty as heck!
This meal really doesn’t take long to make. In fact it’s really as long as you make it take. I took my time prepping ingredients and letting it simmer at the end because I was waiting for my husband to get home and starting cooking it once he was on his way. It won’t hurt to simmer it longer at the end but it’s a choice. At least do the ten minutes so the sauce thickens and the entire mixture gets coated over the ingredients.
A note on the cashews. I used salted dry roasted cashews, so therefore the only actually salt I used was to salt the meat and I didn’t use much. Also, I use coconut aminos in place of soy sauce which is less salty. If you use regular soy sauce, I strongly suggest using unsalted cashews. I’m afraid the dish would end up to salty at the end otherwise.
Its a super flavorful dish. And quick for a week night meal. I’m always down for easy, time efficient, healthy meal for our weeks. Because I just never know how our days will pan out til they are almost over sometimes. This meal hits every category there.

Okay, enough girly silliness! Here is your recipe!
Broccoli Cashew Beef
1 lb round steak (beef or elk) sliced
½ cup diced bell peppers (the more color the better!)
1 bunch green onions thinly sliced
1 tablespoon minced garlic
1 head of broccoli cut into florets or 1 bag slightly thawed to extract some water
½ cup mushrooms (fresh or canned)
1 cup cashews
½ cup coconut aminos or soy sauce
¼ tsp fish sauce
¼ cup lemon juice
¼ cup beef broth
½ tsp red pepper flakes
1 tsp powdered ginger
¼ tsp garlic
¼ tsp black pepper
1 ½ tablespoon corn starch
Prep all of your cut veggies and meat.
Sautee the peppers, onions and garlic in avocado oil (or olive oil) over medium heat for about five minutes. Add the meat after salt and peppering it. Cook for another five to seven minutes toss occasionally. Once most of the pink is gone from the meat add the broccoli and mushrooms.
Add all the sauce ingredients to a small bowl or measuring cup to mix together. Once all those ingredients are mixed completely add the sauce to the pan along with the cashews. Stirring to incorporate throughout.
Cook for 10 minutes. Stirring occasionally.
Serve as is or over rice or noodles.
