Buffalo Chicken Salad

Happy Friday! Are you ready to wrap this week up, and enjoy the weekend? I for one, am glad to wrap the week up and take a deep breath, before starting it all over again.

I have a salad recipe for you that uses the crockpot to cook the meat while you’re gone, and then you just have to toss the rest together! Easy Peasy Lemon Squeasy. To make your kitchen life easier, is my mission. While enticing you to make healthy meals, too. You could also just use a rotisserie chicken and just pick all the meat off the bones and toss it it the seasonings and frank’s (don’t use the stock if doing the rotisserie) if you didn’t want to do the crock pot part or you were pressed for time.

Buffalo chicken is my everything. If there is anything on a menu that mentions, it is hard for me to pass up. It’s just so damn good. And cooking up the chicken in the crock pot allows for perfectly shredded chicken that you can honestly add to anything: salads, wraps, rice bowls, baked potato (seriously you try stuffing a baked sweet potato with buffalo chicken, it’s to die for).

Sorry for the delay on getting a recipe out to you this week. After working on the computer all day, it was hard for me to get this done. I was keeping it simple and quiet this week. But I definitely wanted you to have a new recipe before the weekend!

Buffalo Chicken Salad

For the Crock Pot
  • 1 pound boneless, skinless chicken breast or thighs or combo
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 2 cloves garlic minced
  • 1/4 tsp onion powder
  • 3/4 c Franks Red Hot
  • 1/4 c chicken stock
for the Salad
  • 5 c romaine hearts cut or shredded
  • 3 stalks celery diced
  • 2 large carrots diced
  • 2 c grape or cherry tomatoes sliced in half
  • 1 cucumber sliced or diced
  • blue cheese crumbles
  • Primal Kitchen's Ranch Dressing
  1. Add all the crock pot ingredients to the crock pot (chicken, spices, and liquid) and cook on high for 4 hrs or low for 8 hrs. 

  2. Shred the chicken, and if not using right away, add back to the crock pot until ready. I pulled mine out about 5 minutes before I was ready to use it so it wasn't so hot.

  3. Assemble the salad ingredients. Mostly your choice but I layer the lettuce then the veggies and chicken then the cheese and dressing on top.

  4. Enjoy!
