I’m sharing a favorite with you all, one that I can always do in a pinch because we keep all these ingredients on hand in our house as pantry staples. So even if I haven’t went grocery shopping, I can whip this up after a busy day no problem!
I’ve been making these for years with no recipe. I challenged myself to write it down this time, so I can share it with you! People love chicken tacos, and this one is so easy after making it, I doubt you’ll even need a recipe! Always good to have those recipes you can just toss together with out much thought, effort or cost but it still tastes good and is healthy.
I used a coconut cassava tortilla (I love siete foods tortillas, my husband used flour tortillas) to have with my tacos that night, and the next day I took leftover meat from the tacos and had a salad for lunch with arugula, spinach, bell pepper, cucumbers, tomatoes and salsa verde and guacamole for the dressing. Boom two different meals out of it! The best way to not get bored with healthy eating is to just change up the way you serve it. And using salsa and guacamole for dressing on a salad is the best! And way healthier than store bought dressing is.
For this recipe I used a fresh jalapeno. But if you don’t have fresh, you can use jarred or canned jalapenos. I’ve done that numerous times. I try to keep a jar jalapenos on hand, in case I need them but don’t have fresh. I totally understand that you can’t always go to the grocery store to buy one or two ingredients, just for one recipe. Especially during the week. So don’t fret if you don’t have fresh. Used canned or jarred. Just buy the kinds without funky added ingredients.
This is a meal the whole family can enjoy! If you have little ones, that love tacos but not super spicy, de-seed the entire jalapeno, use half the can of chiles, and scale back the pepper a bit. This recipe as is, is pretty spicy. Perfect for grown ups that like spicy, but would need to be scaled back for those that don’t.

Simple and easy tacos you can make anytime.
- 4 to 5 Cups Shredded Chicken
- 1/2 Yellow Onion Diced
- 1 Jalapeno Mostly Seeded & Diced
- 1 tbsp Cumin
- 1 tbsp Chili Powder
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Cilantro dried
- 1/4 tsp Oregano dried
- 1/2 to 3/4 Cup Water
- 2 tbsp Avocado Oil
Heat Avocado oil in a large skillet over Med High Heat
Add the onions and jalapenos, and cook until the onions are translucent, about 7 minutes
Add garlic and stir for 30 secs
Add Chicken and the seasonings ( I measure all my spices into a small glass bowl to begin with and just toss in)
Stir like you mean it
Add chiles and water
Cooke for 10 to 15 minutes until the water is gone, and stir occasionally during this time
