It’s Monday. I think that says it all. I have a super simple side dish for you. Because that’s all I can do on this Monday! Normally, I don’t mind Monday’s. It’s really just another day, but today feels a little slow for me. This is recipe is easy enough you can swing it even on the worst Mondays!
The lemon really makes this dish pop, and roasted broccoli is such a great way to eat broccoli! Lemon juice adds a lot of flavor to many different dishes, without a lot of work on your part. It’s a fresh tang, that transforms blah to fabulous. When in doubt just squeeze lemon 🙂
The smaller the florets the better they tend to roast, I like to get mine a little char all over them. But that is totally a preference, if you don’t just watch them towards the end, and pull them out when they are to your liking.
I tend to love roasted veggies, for the taste and the convince. Its so easy to toss them in the oven while you work on the rest of dinner, to complete your healthy meal. Always eat your veggies!

Lemon Roasted Broccoli
1 bag of fresh broccoli precut florets or 2 heads of broccoli cut into florets
1 tablespoon avocado oil
1 tsp Himalayan pink salt
½ tsp garlic powder
1 tsp lemon pepper
Juice of half a lemon
Preheat oven to 400
Toss broccoli in a bowl with the oil, salt, garlic powder, and lemon pepper.
Arrange on a baking sheet and bake for 30 mins.
Remove from oven and place broccoli in a serving dish, squeeze half a lemon over top and toss.
