GOOOOD Morning! And Happy, Happy Friday Love Bugs! Have I got an easy, delicious side dish for you. If you’re over ran with garden tomatoes like I am, you’re in luck with this recipe. I’m seriously loving it so much. The summer fresh tomatoes really make it sparkle, but no garden no problem. Hit up your local farmers market or be nice to your neighbor if they have a garden, ha-ha. Even store bought tomatoes this time of the year are better quality then they are the rest of the year if you have to shop for them.
Now can I ask you a serious question? If you care… if not just jump down to the recipe darlin’, no problem. Why does it take so long to get back into life after a vacation? I craved getting back into my routine after returning from vacation, but it’s been a struggle bus to get into the groove. And I’ve been back for a week already. I feel better every day, but lord getting over the exhaustion of the trip and traveling is a real drag. Worth it but a drag. I wasn’t just riding the struggle bus, I’ve been driving that thing into the ditch.
But today is the first day I have a whole lotta pep in my step. Maybe because its Friday, but I think I’m finally caught up on some sleep. Don’t ever think something like sleep is overrated. It’s not, there is a slew of health benefits linked to quality sleep and getting your full nights sleep. It plays a huge part in your mood too. I can attest to that for sure. Nothing is worse than hating everyone and everything. Life is way to wonderful, short and full of possibilities to be a the dark cloud of doom in every situation.
Wow, that got serious fast. In my defense I haven’t really spoke to anyone yet all day. Lucky you!

You could also do these with cherry tomatoes if you wanted to just halve them first. All the marinated tomato recipes I’ve seen on pinterest this season have had classic Italian flavors. Which I don’t have anything against. But I wanted these to be different and my favorite flavors are intertwined in this recipe. Jalapeno, cilantro, cumin and garlic make my world go ’round. They pair so well with fresh juicy tomatoes as well.

- 4 large - med Tomatoes sliced
- 1 Jalapeno thinly sliced, seeded to preference
- 2 cloves garlic minced
- 1 tbsp minced fresh cilantro or 1 1/2 tsp dried
- 1 tbsp minced fresh parsley or 1 1/2 tsp dried
- 1 tsp cumin
- 1 tsp fine sea salt
- 1/2 tsp black pepper
- 1 tbsp dried minced onion
- 1 tsp dried oregano
- 1/4 c red wine vinegar
- 1/3 c avocado oil or evoo
arrange tomatoes evenly in a large shallow container with a lid.
Mix together remaining ingredients, and pour over the tomatoes.
allow to marinated 2 -3 hours to overnight. Bring to room temperature before serving.
Serving ideas: side dish, salad, put on a sandwich.
