Roasted Balsamic Garlic Brussel Sprouts

It is so unreal to me that summer is almost over! It took forever to get here, and now its leaving and I’m not ready at all! My relationship with summer is pretty serious, I’d say. Anyways, how can you make a Friday better? With a brand new recipe! 

It is unbelievable to me that people can truly not like vegetables. They have to be doing them wrong if that’s the case. Because these roasted balsamic garlic brussel sprouts are so amazing. They only way to make them better would be to add some bacon. Which I think I will do the next time I make them!

If you’re having a hard time convincing your family to eat their vegetables then get creative with flavors and cooking methods. It’s hard to get people excited about vegetables if you just steam some frozen veggies with salt and pepper. Not hating on anyone. Sometimes you just have to let good enough be good enough. But be brave and try some recipes that elevate your vegetable game. Also, everything is better with balsamic! It’s my favorite thing.

Now a few words on the recipe. I HIGHLY suggest that you use fresh garlic and thinly slice it for this recipe. Because the flavor of slices of roasted garlic in every bite is amazing. You can use jarred minced garlic or sub garlic powder if you have too. But at some point try using large fresh garlic. I purchased some spanish garlic at the farmers market last weekend and it is truly the best garlic I’ve ever used in my life. I sure hope they’re there again this weekend so I can get more.

Roasted Balsamic Garlic Brussel Sprouts

  • 2 pounds brussel sprouts cleaned, trimmed, halved
  • 3 tbsp avocado oil or olive oil
  • 5 tbsp balsamic vinegar
  • 4 large cloves garlic thinly sliced or minced
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  1. Preheat oven to 450 and line a baking sheet with parchment paper or foil.

  2. Place the cleaned, trimmed and halved brussel sprouts and garlic in a bowl. 

  3. add remaining ingredients. Saving a tbsp of the balsamic for later.

  4. Toss to combine thoroughly and spread out on the baking sheet from earlier.

  5. bake for 30 minutes. Should be golden brown and smell amazing. 

  6. After baking, drizzle the remaining balsamic vinegar over the brussel sprouts.
