Roasted Cauliflower

Roasted Cauliflower is the new recipe this week! Do your new recipe happy dance. No? Well shucks, that ain’t much fun. 

I had vowed to bring budget friendly and simply easy meals to the blog more often and this is a check mark for both. You’ve got to eat your veggies to be healthy and kick ass so you might as well make them tasty.

The trick to the best vegetables ever: roasting them. It can totally redefine even your most loathed vegetable. I promise.  How do you think I get my husband to eat brussel sprouts?

Another great thing about this recipe is it’s got lots of flavor. Thanks to my favorites: cumin, smoked paprika and garlic. They really elevate anything, and cauliflower is a good foundation to add flavor too.

But feel free to play with the seasonings, that’s the great thing about roasted vegetables. You can season them so many ways, and make them compliment whatever the main dish is.

Hope you enjoy this versatile side dish that is easy enough for any week night. Just prep, pop in the oven and you’re free to work on the rest of dinner.

  • 1 med - large head cauliflower cut into florets
  • 2 tbsp olive oil or avocado oil
  • 1/2 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika or regular
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  1. Preheat oven to 400 F, and combine spices in a small bowl.

  2. put the cut florets of cauliflower in a bowl and toss to thoroughly cover the cauliflower.

  3. Bake 25 to 30 minutes or until golden to your preference.
