Slow Cooker Taco Chili

Hey, hey guys! Did you survive Christmas?? I guess I did, after all I’m here to share a recipe with you all! An easy but loaded with flavor taco chili! 

Don’t get me wrong, I love the holidays, the season, the reason for the season, the memories, the sentiment etc. But as I get older the exploitation of Christmas and the way people stress over it until their sick and broke just makes me sad. It’s been on my mind all month. And despite my best efforts it’s still hard to convince others that we don’t need that much! We just want to spend time with our families and enjoy the time together. Not fuss over every detail.  You know that song “can’t buy my love”. You can’t buy Christmas either. The Who’s in Whoville still celebrated after the grinch stole their presents. Because it’s about the heart not the wallet.

It definitely gives me a lot to think about when my husband and I have kids and we want them to truly understand it’s about the people and memories. Not having the 100th toy. I had a friend tell me she does two gifts for her grand kids and then a check for their college funds. Genius! I love that idea so much. And I wish I had that growing up. I’m still paying for college and had no savings for college when I started. It’s an expensive world out there.

Anyways, I am still bloated from Christmas eating and this weekend is another round of booze and eating! I think this week will have to be a week of strict clean eating so I can still enjoy the food on New Years Eve. Do you have New Years Eve plans? I am making a list of all the goodies I will have here so I can grocery shop and start prepping. NYE is at our house! And I’m hoping to make sure everyone has a great time.

Now on to this recipe. Slow Cooker days are the best, aren’t they? You have a meal ready when you have a crazy/hectic/busy day or week. And it is possible to do healthy in the slow cooker. It’s like the kitchen secret recipe. If you have a slow cooker and you tell me that you don’t have time to cook, I will slap you. You have no excuse to heat up a box of frozen mystery food or fast food to go for dinner. You can do better than that. You’re an adult, and responsible for filling your body with the best, most nutrient dense meal possible. Your health is tied to what you eat. You truly are what you eat. And if you eat crap; you feel like crap. Your health will show it. You can make a difference in your health: mind and body with better food choices. Is it hard? Yes. But is it worth it? Absolutely! Does it get easier over time? Yes.

Embrace your health this new year. Put yourself first. No one else will do it for you. If you want to feel better in your skin, if you finally want to shake that always feeling blah/sluggish/unhappiness; Do It!! Your mind, your body, your physical, mental and emotional well being will benefit. You will feel happier in your own body. It won’t always be easy. But know your goals. Know that you want to live a long healthy life, feeling good in your body. You only have one body in this life, take care of it. Don’t say your too old. You’re never to old to put your health first until you’re dead.

Who is with me?? Every year, my eating is better. Do I enjoy a treat here and there; yes. But less and less does that food own me and I go off the rails. As I eat better, I feel better, my outlook is better on everything. My stress is more manageable, because my body is strong enough to handle it. And you don’t have to do the journey alone. There are a lot of people doing this everyday and so many resources for clean recipes (like here!) and better products with cleaner ingredients in the grocery store all the time.

Let’s make 2017 the best year ever!

Slow Cooker Taco Chili

Ingredients
  • 1 pound ground chicken
  • 1 pound ground elk or beef
  • 1 yellow onion diced
  • 3 cloves garlic smashed and minced
  • 2 jalapeno diced, and deseeded to taste
  • 4 oz can green chiles
  • 2 14.5 fl oz can diced tomatoes
  • 1 15 oz can black beans drained and rinsed
  • 1 15 oz can red kidney beans drained and rinsed
  • 1 cup beef broth I used Epic Provisions Jalapeno Beef Bone Broth
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp cumin
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried cilantro
  • 1 tbsp chili powder
Instructions
  1. break up meat and add to the slow cooker with the onion, garlic and jalapeno

  2. add the rest of the ingredients and stir

  3. cook on low for 8 hours or high for 4

  4. garnish with: fresh cilantro, cheese, chopped green onion, jalapeno, etc!
