Hey you wonderful people! I make salads probably once a week or so for dinner or lunch. But it’s usually just throw together whatever, I got around. And it doesn’t usually scream make me a blog recipe. But I was determined to share a salad recipe for you!
So that is exactly what I did here. And I used a new salad mix from Safeway I found to try out. A Taylor Farms Kale & Beet salad mix. Raw kale is not usually my jam. I like cooked kale, not the raw stuff. But I am determined to love kale in all it’s forms because its healthy and I like to switch up my greens to keep myself from getting to sick of them.
And this made for a gorgeous salad. My favorite salads, the kind I like to make and eat are loaded with protein, veggies, healthy fat and a variety of greens with loads of flavor. This has a homemade dressing that kicks it up a notch.
I don’t know if anyone actually reads the written part of the blog or skips straight to the recipe. But if you do, thank you. I hope you enjoy something from my ramblings, and if you’ve been inspired to make a recipe or think then I feel like I’ve really accomplished something. And it helps me continue to want to create wonderful things to share. Because even though enjoy it, what is the point of sharing if no one else cares? If no one wants to try something?
If you do follow me closely, you’d know the last couple weeks I’ve only posted one recipe. And I’m sorry about that. My creativity has been off kilter just a touch. I am still cooking and making healthy meals, but they haven’t had the wow factor for the blog, or if they did then I didn’t measure anything or take notes. I’m sorry if I have failed you in that regard. But I haven’t left and I will be hopefully posting more often this coming week.
Perhaps I had the January blues. That happens to people but the thing is I haven’t actually been sad. Just uninspired. But I have started to do some things I enjoy that I hadn’t been doing as much, so hopefully that sparks the flame again to get more creative. Making and eating delicious food, also inspires me. Whether that is in my own home or at a restaurant. But there is other things that inspire me too. Reading, photography, learning, walking outside with my dogs, people I love, the outdoors, stories, music. What inspires you? What keeps you creative?
Enjoy this healthy, flavorful salad for a quick dinner or lunch. It’s super easy, great flavor and a good way to get your greens, healthy fat, and protein all in one.
with a lemon vinaigrette
- 1 package Kale & Beet Salad mix
- .5 - .75 pounds Round Steak
- 2 c Roasted Tomatoes
- 1 Avocado sliced
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Garlic Powder
- 1 tsp Lemon Zest
- 1 Lemon juiced
- 2 tbsp Red Wine Vinager
- 2 tbsp Dijon Mustard check your labels to get a clean one!
- 1 clove Garlic minced
- 1 tsp Salt
- 1 tsp Black Pepper
- 1/2 c Avocado oil or EVOO
Mix the salad dressing in bowl or jar. Whisk or shake vigorously to combine. Store the fridge to chill while you prep the steaks.
Season the steaks with the salt, garlic and black pepper. Cook on an outdoor grill or indoor grill pan until you reach your desired done-ness. I cooked these about 3 or 4 mins on each side.
After cooking, allow the steaks to rest on a cutting board for a few minutes prior to slicing.
Toss the salad mix with some of the dressing to thoroughly coat them.
Slice the steaks and layer on top of the greens. Layer the tomatoes and sliced avocado on top as well. Drizzle with more dressing.
Serve immediately and enjoy!
