Happy Monday Morning!
I challenged my followers and friends on my Facebook page to share with their friends and that once I reach 175 likes, I’ll share a special family recipe. My apple salad! And holy smokes, people want apple salad. Looks like I might be making that this week for the blog!
Today though it’s about these easy, flavor full meatballs! I have only ground elk left from last years elk. And I haven’t gotten one for this year, so hopefully I will soon. Anyways, I know ground meat gets challenging finding something new. I love making variations of meatballs. They tend to be so versatile! Serve them with pasta or rice, by themselves, and switch out spices to get an entire new flavor. Easy way to dress up ground meat.
Meatballs also seem to be an easy way to please even the pickiest eaters. And aren’t these just pretty?
I served them on top of Spanish rice with a scoop of guacamole. Both homemade as well, and maybe some day I’ll share my guacamole recipe. But we will see. It’s taken months for me to get it perfect. And multiple trips to our favorite Mexican Restaurant.
If you know are one of the people that know me personally, you know I’m making it my personal mission to spread as much kindness as possible. Those that don’t know me personally, that is what I’ve been working on in the negativity, and anger firestorm that took over Social Media in the days following the election. I refuse to talk about politics here but last week on the blog I talked about raising each other up and supporting each other in our own personal journey to better health. Be it physical, mental or spiritual health. And to be mindful that our journeys look different from each other.
This same idea applies to life in general. Everyone has different paths, beliefs, values, etc. Are they wrong because they look different than yours? No, they’re just different. And we must learn to live with those differences. In some cases for compromise, and in others just to be mindful. Not everyone in the world is going to agree with you all the time. And as adults, you learn to accept that.
So I have a challenge to YOU. Join me in my mission to spread kindness. Do one thing a day, that is more mindful and understanding to others. This can be in multiple forms, or whatever method. Just spread kindness where ever you go.
And then make these this week! Your family will love them, and spending time together as a family at the dinner table is so important. These are even kid friendly to make. They can help you cook!
- 1 pound ground beef or elk
- 1 egg
- 1 jalapeno finely diced
- 1 red bell pepper finely diced
- 3 cloves garlic minced
- 2 tablespoons dried chopped onion
- 1 tsp fine sea salt
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp cilatro dried
- 1/2 tsp black pepper
- 1/2 tsp oregano dried
Preheat oven to 350F
Add all ingredients to a large bowl, and mix thoroughly with your hands to incorporate everything.
Form one to one and half inch balls rolling them between your palms to form them.
Place the meatballs into a castiron skillet or 8x8 casserole dish.
Bake for forty minutes.
Serving suggestions: serve on top of Spanish rice with a scoop of guacamole.
