Good Thyme Pork Chops

  • 4 bone in pork chops
  • 2-3 tbsp ghee or olive oil or avocado oil
  • zest of one lemon
  • 1 tsp fine sea salt
  • 1 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp dried thyme
  • lemon quarters


  1. Mix the lemon zest, salt, pepper, garlic powder and dried thyme in a small bowl.

  2. wash and pat dry the pork chops, then rub the seasoning mix onto both sides very well.

  3. heat the cooking fat of your choice in a skillet or grill pan over med high heat. 

  4. once the pan is hot, add the pork chops in and reduce heat to medium. Cook for about 5 minutes (these weren't very thick, if using thick cooking time will increase).

  5. Flip and continue cooking on the other side for 5 to 7 minutes depending on the thickness.

  6. Remove to a platter and squeeze lemon juice over the top. Serve and enjoy!
