Mix the lemon zest, salt, pepper, garlic powder and dried thyme in a small bowl.
wash and pat dry the pork chops, then rub the seasoning mix onto both sides very well.
heat the cooking fat of your choice in a skillet or grill pan over med high heat.
once the pan is hot, add the pork chops in and reduce heat to medium. Cook for about 5 minutes (these weren't very thick, if using thick cooking time will increase).
Flip and continue cooking on the other side for 5 to 7 minutes depending on the thickness.
Remove to a platter and squeeze lemon juice over the top. Serve and enjoy!
